Very Veggie Pasta Salad

A Tom Douglas® Recipe

INGREDIENTS: 

  • 4 zucchini, cut in half 
  • ½ red onion, thinly sliced 
  • 1 clamshell cherry tomatoes, sliced in half 
  • ½ cup parmesan, grated, plus some for garnish 
  • 12 ounces pasta of your choice  
  • 3 tablespoons ‘Rub with Love’ Veggie Rub 
  • ¼ cup red wine vinegar 
  • Juice of half a lemon
  • 1/4 cup extra virgin olive oil 
  • Salt and pepper 

DIRECTIONS: 

  1. Precook your desired noodles. 
  2. Drain from water and generously toss with olive oil, allow to cool in fridge. 
  3. Cut zucchini in half and sprinkle with ‘Rub with Love’ Veggie Rub. 
  4. Grill or roast until barely cooked through.   Enough to get some dark color or grill marks. 
  5. Remove zucchini from grill or oven and slice in quarters.
  6. In large bowl, mix together pasta, zucchini, thinly sliced red onion, sliced cherry tomatoes, red wine vinegar and lemon juice.
  7. After mixing, toss in grated parmesan and mix again.
  8. Add olive oil, salt and pepper to taste.
  9. Sprinkle with garnish of ‘Rub with Love’ Veggie Rub and parmesan.
