SWEET POTATOES WITH SPICY TOKYO RUB

INGREDIENTS
- 4 sweet potatoes
- ¼ cup honey
- 1 tsp lemon juice
- 1 tablespoon water
- 1/2 tsp sea salt
- 4 tablespoon butter, melted
- 4 green onions, washed and sliced
- kewpie mayo, to taste
- 'rub with love' spicy tokyo rub, to taste
DIRECTIONS
Poke a few holes in the sweet potatoes using the tip of a paring knife and roast in a preheated 350F oven for 45 minutes or until cooked through.
While the potatoes are cooking, slowly heat honey in a heavy bottom pan. Cook until slightly darkened and aromatic. Remove from heat, add lemon juice, water and salt.
Cool the potatoes at room temperature until you are able to comfortably handle them and they have firmed up.
Slice the sweet potatoes in half lengthwise, (or into smaller pieces if they are large). Lightly score inside by pressing a fork into the flesh. Brush with melted butter.
Turn on broiler and broil potato to brown butter and tops of the sweet potatoes.
Drizzle lightly with some of the honey sauce (you can add a splash more water if it thickens,) kewpie mayonnaise and sprinkle with Spicy Tokyo Rub and scallions.
Eat right out of the skin!
