Peri Peri Chicken Skewers with Salsa Verde

INGREDIENTS:

  • 1.5 pounds boneless chicken thighs 
  • 4 tablespoons ‘Rub with Love’ African Peri Peri Rub
  • 4 tablespoons fresh dill, chopped 
  • 1/3 cup fresh parsley, chopped
  • 2 tablespoons capers, chopped
  • 4 tablespoons chives, sliced 
  • 1/3 cup extra virgin olive oil 
  • Juice and zest of 1 lemon  
  • 3 tablespoons red wine vinegar 
  • Salt and pepper, to taste 
  • Skewers 

DIRECTIONS: 

CHICKEN SKEWERS:

  • Soak wooden skewers in cold water for at least 30 minutes. 
  • Fire up the grill. 
  • Cube chicken thighs. 
  • Thread the chicken onto the skewers. 
  • Arrange on tray and sprinkle with extra virgin olive oil and rub with Peri Peri.
  • Place the chicken skewers on the pre-heated grill.
  • Grill until cooked through.  About 5-7 minutes on each side. 
  • Remove skewers and top with Salsa Verde 
  • Serve and enjoy! 

SALSA VERDE:

  • Place all prepared ingredients dill, parsley, chives, capers, lemon juice and olive oil to a small bowl. 
  • Mix well.
