Peri Peri Chicken Skewers with Salsa Verde
INGREDIENTS:
- 1.5 pounds boneless chicken thighs
- 4 tablespoons ‘Rub with Love’ African Peri Peri Rub
- 4 tablespoons fresh dill, chopped
- 1/3 cup fresh parsley, chopped
- 2 tablespoons capers, chopped
- 4 tablespoons chives, sliced
- 1/3 cup extra virgin olive oil
- Juice and zest of 1 lemon
- 3 tablespoons red wine vinegar
- Salt and pepper, to taste
- Skewers
DIRECTIONS:
CHICKEN SKEWERS:
- Soak wooden skewers in cold water for at least 30 minutes.
- Fire up the grill.
- Cube chicken thighs.
- Thread the chicken onto the skewers.
- Arrange on tray and sprinkle with extra virgin olive oil and rub with Peri Peri.
- Place the chicken skewers on the pre-heated grill.
- Grill until cooked through. About 5-7 minutes on each side.
- Remove skewers and top with Salsa Verde
- Serve and enjoy!
SALSA VERDE:
- Place all prepared ingredients dill, parsley, chives, capers, lemon juice and olive oil to a small bowl.
- Mix well.
