JERK CHICKEN THIGHS
Jerk Chicken Thighs and Sweet Potato
Serves 2 – 4

INGREDIENTS:
- 4 Chicken Thighs, skin on
- ‘Rub with Love’ Jerk Spice
- ‘Rub with Love’ Ginger Pineapple Teriyaki Sauce
- 2 Sweet Potatoes
DIRECTIONS:
- Preheat grill to medium-high heat, about 350°
- Preheat oven to 350°
- Place sweet potatoes in oven for about 60 minutes or until the sweet potato is soft. Remove from oven.
- Rub chicken thighs with Jerk Spice and let sit for 5 minutes.
- Place chicken thighs skin side down on prepared grill.
- Turn occasionally until skin is browned and crispy, about 20 minutes until internal temperature of 165°
- Glaze on Ginger Pineapple Teriyaki Sauce.
- Finish on grill for 5 minutes over medium-high heat.
- Meanwhile, take sweet potatoes and place under coals for the remaining 5 minutes.
- Remove both chicken thighs and sweet potatoes and serve.
