EASY LAMB CHOPS

Easy Lamb Chops with Spring Onions
INGREDIENTS:
- 1 rack of lamb
- 4 tablespoons ‘Rub with Love’ Bengal Masala Rub
- 1 bunch walla walla sweet spring onions
- Maldon Sea Salt Flakes
- Salt and pepper
DIRECTIONS:
- Preheat the grill or grilling pan.
- With a boning knife, trim off the fat from the top of the lamb rack.
- Using boning knife slice into chops.
- Using a meat tenderizer, lightly pound each chop a few times. Making sure the meat is even with the bone, so it evenly cooks.
- Rub each chop with about ½ teaspoon Bengal Masala Rub
- Let sit for 5 minutes.
- Season spring onions with salt and pepper
- Place both lamb chops and spring onions on grill
- Using an instant read thermometer. Take lamb chops off the grill at 115° in the center.
- Remove spring onions when soft and lightly charred.
- Remove from grill.
- Finish lamb with Maldon Sea Salt Flakes.
