Overview: A few teams in our company are going COMPLETELY vegetarian (last we checked, there’s a $360 pot for the winner!). So in the spirit of these actions, we’re going to try and post a MEATLESS MONDAY recipe EVERY FRIDAY so you have time during the weekend to gather ingredients and maybe get inspired by your local Farmers’ Market or grocery store!
THERE ARE STILL ONLY TWO PEOPLE LEFT IN THE VEGETARIAN CHALLENGE! We’ll let you know if Daphnie or Corrie FALLS. lol.. This week, after much deliberation, we’re making tofu with our Rub with Love African Peri Peri Rub. The Peri Peri Rub has great bright lemon, garlic and spicy peppers that will elevate your bean curd into something entirely different from the usual combination of Asian flavors! It’s also great on whole roasted chicken, pork chops or anything that you would have made with a lemon pepper seasoning. OK HERE WE GO!
Left: We purchased extra-firm tofu since it’s easier to handle and stacked a few plates on top and left it to drain all of it’s excess liquid for 4 hours, refrigerated. We then patted it dry with paper towels. Right: We’re making “tofu steaks” so we’re going to be cutting our tofu lengthwise.
Left: Here, we’ve already cut 1/3 of the block and are working on the final piece. Right: With our hands, we used about 2 – 3 tablespoons to rub per piece, trying to coat as evenly as we could.
Left: We preheated a nonstick pan over medium high heat with 1 tablespoon of oil and added a few chilies for heat (totally optional). We sauteed until one side was golden brown (about 4 minutes) and flipped it and cooked another 4 minutes. Right: Once both sides are golden, we lay it on a paper towel to drain any excess oil.
We made a lemony yogurt at the base of the plate and laid the tofu and peppers on top! The salad that we topped the tofu with was a combination of red onions, cucumbers, celery leaves, parsley, feta cheese, dill and mint! It’s a great way to bulk up a Greek salad without making you feel like you had a huge meal. If you were to put the entire dish in a pita, we would definitely not stop you.
