Last week our lovely pastry sous chefs Brittany Bardeleben and Katharine Wright (photo top, Brittany left and Katharine right) led a class on Holiday Pie Baking from our Dahlia Bakery Cookbook.
We made sugar and spice and everything nice including our Traditional Pumpkin Pie, “Hot Buttered Rum” Apple Pie, and Dahlia Triple Coconut Cream Pie!
Brittany and Katharine showed all the steps for pies that will impress at Thanksgiving time- including a fancy Dahlia Workshop trick our student Anne (photo above) really enjoyed! The trick is- if you use a kitchen torch to torch the filling of the pumpkin pie just a bit you will avoid air bubbles in your finished pie!
