“O’ zapft is!” (It’s tapped!) The Saison of the Witch is tapped!


On Tuesday September 20th, the Brave Horse Tavern had their second beer dinner dedicated to one of our favorite holidays….. Oktoberfest!

Chef Brian Walczyk (photo above) and Beer Czar/Sous Chef Warren Peterson teamed up and created a delicious pairing for the super celebratory fest.

Guests dined in our event room at Ting Momo, seated at picnic tables underneath a blanket of hanging pretzels and hop vines.  On the tables were soft pretzel sticks with house mustards.

First course was potato and cheese kroketten: satina potato and Emmenthaler fritters, chanterelle mushroom  “jaegar” pickled mustard.  When you cut into this fritter the Emmenthaler oozed out perfectly!  Warren paired this with Silver City Brewery’s Oktoberfest.

Next up was a bratwurst and pretzel knodel- a house made bratwurst stuffed pretzel dumpling, mustard spiked applesauce, saurkraut.  This was paired with Firestone Walker Brewery’s Oktoberfest.

 

Our third course was smoky kassler style pork tenderloin- applewood smoked pork loin ham, molasses glaze, smoked cherries, spaetzle, and kale.  Paired with Bayern Brewery’s Oktoberfest.

And for dessert we unveiled and tapped the very first keg of a Tom Douglas and Elysian Brewery’s collaboration beer- Saison of the Witch- paired with apple strudel and frozen custard.

The Saison of the Witch was made from 120 pounds of roasted “Baby Pam” pumpkins, from just across the pass in sunny eastern Washington.  Fennel fronds and bulbs also went into the mash to lend some aromatics and a soft herbal background.  This elegant and food friendly “Saison” will make an exciting showing with a medium amber-peach color and a 5.6% ABV.

It’s now available at the Brave Horse Tavern as well as other Tom Douglas restaurants.

Our next beer dinner will be in November when we will celebrate Ciders!

Rub with Love is very proud to announce that our manufacturing warehouse in Ballard just passed its annual third party food safety audit.  For the past three years, our record keeping and production procedures have improved, creating a very efficient operation.

Each batch of Rub with Love is mixed and packaged by hand by our wonderful team of Spice Girls under the watchful supervision of Steven Steinbock.  Great job everyone!

Great American Beer Festival/ by Warren Peterson, Brave Horse Tavern Sous Chef

Last weekend I went to Denver, Colorado, for the Great American Beer Festival.  This is the nation’s biggest beer festival and one of the biggest beer festivals in the world. Here are some facts about the festival: This is their 30th annual festival and it sold out in one week!  2,375 beers in the festival hall- the biggest selection of American beers ever served:  more than 36,000 gallons of beer.  At the festival, 466 breweries served beer to 49, 000 attendees over the course of  3 days.

I attended the festival with the owner and brewmeister of American Brewing Co, which is a fairly new brewery in Edmonds.  Neil Fallon is the owner and Skip Madsen is the master brewer. (Skip, by the way, is the guy who put Boundary Bay on the map; it’s his claim to fame.)  We worked to develop a beer together to feature at Brave Horse Tavern, and we came up with a beer we called Brave American Brown Ale.  We brought our beer to the Great American Beer Festival be tasted by the public and judged in a blind tasting, and here’s what happened- we won a bronze medal for our beer in the “American Brown Ale” category!   Can you believe it? This made me feel great because I was there at the Festival to support Neil and Skip and I was there to support us at Brave Horse Tavern.  It was so fitting that we won an award!  Stop by Brave Horse Tavern to taste our award winning Brave American Brown Ale!
