Robyn says: Dahlia chef, Brock Johnson, served caramelized figs to over 400 people at Cheesetopia!

Pamela says: The American Cheese Society had a big sale in the Ballroom after their awards ceremony (see the 4 small photos above).   People were walking out with armfulls!!  A big thank you to Alexis (Catering Sales Manager), who supported this event with many hours of labor, both during the cheese conference and leading up to it!!

    Yes, Alexis was managing a zoo with the sale!!! Haven’t seen anything like that since the old Osborn & Ulland Sniagrab ski sale days!!!… for those of you old enough to remember. Thanks, Alexis!

    I hear you made your own caramelized figs this weekend Bruce, how did they turn out???
    Brock’s were out of this world – what a simple preparation, huh? I think I had about 20
    at Cheesetopia!!! I also love figs grilled, after they are coated in premium olive oil
    and a little balsamic!!! Cheers!
