Tom’s Five Spice Chicken by Shelley Lance, Blog Editor

Finding out that someone regularly cooks and loves a recipe from one of our Tom Douglas cookbooks is a sure thing to put a big smile on my face.  So I was thrilled to find our Five Spice Chicken recipe from Big Dinners mentioned today in Nancy Leson’s post about her favorite all time chicken recipes.  The link to her original post about Tom’s Five Spice Roast Chicken is here, (Scroll down til you find the photo of our roast chicken).  Nancy also gives a shout out to the cornmeal rosemary cake, also in Big Dinners, and says it’s her favorite cake recipe!  Thanks, Nancy!

Hello Shelley, it has been a while since I last communicated with you. My women friends (our husbands only grill)
and I throw Tom Douglas dinner parties and receive raves from guests. (We live by his cook books.) You also helped my
daughter-in-law, Tara Voss who lives on Bainbridge Island, by encouraging Tom to donate to Senior Services’ annual ball in
Seattle. We thank-you for all that energy and also for providing us with the best restaurants in the world!

We are now looking for a Tom Douglas recipe for garlic mashed potatoes. The Dahlia presented a version, (I believe), that also
included herbs and were pan fried after being mashed. Can you help us?

Our next Tom Douglas adventure will be to join his summer camp. I am trying to persuade my friends–and hope to see
you there! All best, Susan Voss (Gresham, Oregon)
