Pineapple Filled Cookies/ by Dennis Jenson, Operations Manager Catering

Here is one of my Aunt Jean’s famous pineapple filled cookies. They are so good.  I grew up eating these, and during the holidays, they are always first to go.  They are my favorite cookie and remind me of my childhood with every bite.  Here is the recipe:

Aunt Jean’s Pineapple Filled Cookies

Filling:

1 cup of sugar

4 tablespoons flour

1 1/2 cups(#2 can) WELL drained crushed pineapple (save juice)

1/4 cup fresh lemon juice

3 tablespoons butter

1/2 teaspoon nutmeg

3/4 cup pineapple juice

Cook all ingredients together until the mixture thickens (or microwave 5-7 minutes on high).  Let stand to cool.

Dough:

Blend together:

1 cup sugar

2 eggs

2 tablespoons thick cream

1 teaspoon vanilla extract

1/2 cup shortening

Sift together:

2 1/2 cups flour

1/4 teaspoon soda

1/2 teaspoon salt

Add the blended ingredients to the dry ingredients, stirring until blended.  Note: dough will be slightly sticky. Chill dough for 1 hour.

On floured board or pastry mat, roll very thin and cut into 3 1/2 inch (or larger) rounds.  Place on slightly greased cookie sheet. Add one tablespoon pineapple filling and place another round of dough on top, sealing the pastry  with the tines of a fork.  Poke with fork to vent top of cookie.

Bake 400°F until slightly brown.

    My Gramma made these cookies back in the 30′s and passed the recipe to my Mom, who made them every year. We gobbled them up and begged for more! This year, I pulled the recipe from Mom’s recipe cards and made them for my Dad, who’s in a Nursing Home. I took some to our Elk’s Lodge and they were gone in 15 minutes! I’m glad to know the exact recipe my Mom and Gramma used is being enjoyed by many! Yummy, soft, and just the right bit of tang!
