OK Sean…now I have to try this! Delicata is also my favorite, skin and all. I recently raided the mixed organic squash bin at a local grocer (which will remain nameless) and plucked about a dozen of them. I usually roast with butter, slivered garlic, salt/pepper, and a little brown sugar. Now bacon is something I’m going to try next. Thanks for the tip!

We cross bred delicata with acorn squash this summer, do we call it delicorn, or
acornicata? The latter seems a little obscene, but accurate as it is sinfully delicious.
