Caviar and Ice-Burger for ET and Danica!! by Shelley Lance, Blog Editor

Tom and Jackie threw a gala event for staff in Palace Ballroom to celebrate Eric Tanaka’s (TDR Executive Chef) and Danica Noble’s (a super smart federal lawyer) upcoming nuptials in Utah.  All of Eric’s favorite foods were represented in one way or another.  Burgers were not served, but Tom ordered this stupendous burger ice sculpture as a centerpiece (photo right: next to the sculpture, Tom is opening a gigantic tin of caviar!)  Also Tom cooked buckwheat blinis to order on an electric griddle, brushing them with just the right amount of butter to make each blini the perfect conveyance for a big dollop of caviar.

Glasses of bubbles were filled and refilled, of course.  The menu items, too numerous to mention all of them, included fried chicken biscuit sandwiches, juicy pork sandwiches, tingmo, limey fresh ceviche, meatballs, and a tower of caramel corn cupcakes.

But the most uniquely Eric item was this “hotel” salad bar (photo left), a set-up other fancy chefs might laugh at, but very close to Eric’s heart especially when he travels.  All the fixings including thousand island, blue cheese and ranch dressings as well as chopped lettuce, cherry tomatoes, carrot sticks, cottage cheese, and saltines (though some thought crinkle cut pickled beets were missing and some thought it lacked the instant chocolate pudding.)
