Prosser Farm Update by Jackie Cross
Tom and I were over at the farm in Prosser this weekend, all anxious to get something planted in the garden. Well, at least I was. Tom is still contending he is not a farmer. Unfortunately, the roto-tiller man was detained and will not be able to till until later this week. Peas and lettuce will have to wait another week or two, alas. Our garlic is up though and looking quite well! (see photo)
The last two years of gardening in Prosser have been quite the learning curve, but I am convinced that this year the stars are all aligned. Rabbits and faulty irrigation plagued us the first year and last year too much- too fresh- manure didn’t do us any favors. But spring is here again (isn’t it?) and the garden beckons. I fall for its promise every year. Does that make me a sucker or an optimist?

Hi Tom and Jackie,
I am a big fan of your restaurants and I always make it a point to take first time Seattle visitors to Ettas and they leave wanting more. I am so excited to hear you have a home and a farm in Eastern WA! I have grown up in “The Valley” and left home when I was 19 to attend school at UW and there is where I discovered a plethora of fine food. From there I ended up in the San Diego area for 16 years. Needless to say I was surrounded by great food and great restaurants! (I even attended Culinary School). I moved back home 3 years ago and have been having a hard time finding a dining establishment that comes close to the offerings, prices, atmosphere, and quality that I have spoiled me during my time living away from “home”. I make frequent trips to the west side to get my dose of spoiling. Now after hearing that you have a home and a farm in this area do you think that there is a possibility in the near future of you opening a restaurant near here? The tri-city restaurant business is expanding, but there is still a need for variety and quality. You are what we need around here.
